RECIPE | Non-tortilla crockpot chicken tortilla soup ( paleo + gluten free )

paleo crockpot tortilla soup

Tortilla soup is one of my most favorite comfort foods and I had been especially craving it since it has been dark and rainy and cold these past couple of days. I had an idea that I wanted to use the crockpot to make this soup so I googled a crockpot recipe and found a strange recipe with carrots and celery. Um no. Tex-mex food does not use carrots and celery. Then I did a google search for paleo tortilla soup and I found something a little closer to what I wanted to create. In the end, I combined several recipes and used whatever I had on hand to make this soup and surprisingly enough it turned out exactly how I wanted it to taste — spicy, hearty, lime-y, not too tomato-y and super delicious on a rainy day. Lazy weekend

My favorite kind of dinner #charcuterie #onthetable #cheeseandcrackers #cheese #salami #cheeseplate

Not much to report from this weekend. Sly bought a bunch of cheese and salami as we were planning on having a picnic at our recently discovered winery on Friday or Saturday, but the weather never seemed quite warm or sunny enough. Instead we had tea lattes at our nearest Barnes & Noble/Starbucks cafe, browsed through books, picked up some more provisions at Whole Foods, and literally spent the rest of the weekend holed up in our den with the kitties watching junky tv marathons (Opposite Worlds, King of the Nerds), stupid comedies (Anchorman 2), and awesome documentaries (The Crash Reel). We don’t usually watch so much tv, but sometimes we need super lazy weekends like these.

In other news, there are finally signs of Spring everywhere! Too bad it’s supposed to snow again this week.

rainy day=Weather has never stopped me from doing what I want to do. At some point, you just have to embrace it.
lost luggage=annoyed. probably more than annoyed, more like ready to pounce on someone. I need to work on this.
tangled Christmas tree lights=frustrated at first, but then calmly and methodically my OCD kicks in and I will untangle and re-wrap it and put it back exactly how it was in it’s original box.)
